I’m not sure we can get the right flour here (at least not without going to a lot of expense). These are a mix of bread flour and whole wheat flour. They have only flour(s), water, salt, and yeast. When baking, there’s a pan of water in the bottom of the oven, plus a crust spritz partway through.

If you happen to know of any reference photos that show what the ideal looks, that would be great! When I search for “perfect French baguette,” the results are all over the map (heehee).

Yep, I live in LoDo and almost get run over by them while walking every day. I’m a big fan of the concept, but our shared-street infrastructure just isn’t up to the challenge yet. The number that are left laying everywhere impeding sidewalk usage (especially for the mobility impaired) is pretty egregious too. I hope Denver gets much better about accommodating these programs, and then actually enforces the rules.

Yeah, except I think the mob is/was more trustworthy, better organized, and more qualified for their jobs…probably better food too. Then again, I’m basing pretty much all my knowledge on The Sopranos.
